Red Berry & Yoghurt Parfait

Summer is the time to enjoy fresh berries, but you can use frozen ones throughout the year to make this yummy breakfast parfait. The presentation is sure to impress your family and friends. You will need four tall glasses (tumblers) and spoons with a long handle. There is no cooking involved – simply assemble the ingredients to make this great dessert.

Ingredients

    2 cups red berries such as raspberries and red currants 2 cups thick fat-reduced honey yoghurt 1 cup natural muesli

Method

  1. Gently rinse the berries in a sieve and remove excess moisture on kitchen towelling. Place in the bottom of four tall glasses, dividing the berries equally.
  2. Mix yoghurt with a spoon to make it smooth, and place about half a cup in each glass on top of the berries.
  3. Top the parfaits with muesli. Serve immediately or store in the refrigerator for use the next morning.
