Easy Mauritian Lentil Curry
Here is a super simple way to make a delicious curry before you can order and receive a home delivered pizza.
Ingredients
- 2 TBSP extra virgin olive oil
- 1 small onion, quartered and sliced
- 1 clove garlic, crushed
- 1 cup red lentils or moong dhal, picked over for stones and rinsed
- 4 tsp curry powder
- 1 tsp fresh thyme
- ½ tsp salt
Method
- Heat the oil in a saucepan and sauté the onions and garlic.
- Add the lentils, curry powder, thyme, salt and about 3 cups water.
- Cover with lid, bring to the boil, then turn down heat slightly and simmer half covered for about 15-20 minutes or until lentils are soft cooked and the curry has thickened.
- Serve hot over steamed basmati rice or soft polenta

Tip
- Stir in a few tablespoons of coconut cream at the end to tone down the spiciness of the curry if you use hot curry powder.
