Cashew Nut Cream

Mild tasting nuts like cashews, almonds and peanuts can be used to make a deliciously light and fluffy cream you can dollop on any dessert or even your breakfast cereal.  Unlike dairy cream, which is high in saturated fat and clogs up arteries, this cream will help lower your cholesterol and tone down the effect of carbohydrates on your blood sugar level.  So enjoy it - knowing it’s doing your body good!

Ingredients

  • 1 cup raw cashew nuts
  • 4 canned pear halves, drained
  • ½ tsp vanilla essence

Method

  1. Place all ingredients in a food processor and puree for several minutes until really smooth and ivory in colour.  Scrape down sides of the bowl with a spatula, half way.
  2. Enjoy immediately or store for up to several days in a small glass jar in the refrigerator.  Makes 1 ½ cups or 18 tablespoons.
